In Miami, Fla., he finds a hidden gem at Moreno's Cuba in South Beach, famous for their traditional Lechon served with rice and beans and their nontraditional Ropa Vieja Empanada. Next, Sabin heads to Traverse City, Mich., where artisan sausage joint Wren the Butcher is serving up scratch-made Farmhouse Sausage that uses pickled veggies in a play on sausage and peppers.
